Penne with Kalamata olives
Ingredients
– 1 packet of penne pasta
– 1 cup of Kalamata olives, sliced
– ½ cup of capers
– ½ cup of extra virgin olive oil
– 4 finely chopped tomatoes
– 1 finely chopped onion
– 2 finely chopped garlic cloves
– ½ teaspoon oregano
– 1 cup water
– Salt and pepper
Preparation
Rinse the capers and drain them. In a saucepan, sauté the onion, stirring, until caramelized. Add the remaining ingredients except for the pasta, stir and bring to a boil 1-2 times. Lower the heat to medium and continue boiling for 10-15 minutes, until the sauce thickens. Meanwhile, in a pot of boiling salted water, add the pasta, stir and boil for the time indicated on the package. Drain and return to the pot. Pour the sauce over the pasta, stir to combine, and serve with grated cheese.
